Matcha
Matcha is the most rare, most costly and most refined Japanese green tea. In fact, you could call it the king of the green teas. Biotona Matcha teas are made exclusively from fresh, young tea leaves (tencha) from the cultivars Saemidori, Okumidori or Yabukita. The tea shrubs are shaded by tarpaulins from the sun for between 3 and 5 weeks before harvesting, following which the leaves are picked in the traditional manner by hand during the first harvest at the beginning of May. After being immediately subjected to a steaming process, the tencha are ground into Matcha, an ultra-fine green powder. This is done either by traditional grinding stones or with ceramic pearls, depending on the type of Matcha. Consequently, the end product contains no leaf stems or veins, but consists exclusively of pure leaf pulp.
