Ceremonial Japanse Green Tea

Biotona bio Gyokuro is the most refined and most costly Japanese green tea, with a fruity, yet full and intense ‘umami’ aroma (thanks to the presence of theanine). This tea is made entirely from young tea leaves, which are traditionally handpicked at the beginning of May (the first harvest), after an overshadowing period of 3 to 4 weeks.

 

Origin & cultivar

Green tea* (Camellia sinensis) (100%) from Japan. *organic culture

Saemidori, Asanoka or Okumidori or a blend of these cultivars, depending on the quality of the harvest.

Use

Japanese green infusion tea is prepared by infusing or 'brewing' the whole processed tea leaves in hot water. The amount of tea and water you use, as well as temperature of the water and the length of the infusion time, will vary depending on the type of tea you choose. It is important to use soft (only lightly mineralised) water and you also need to take account of the right temperature. If you opt for a higher temperature your tea will taste more bitter, unless, of course, that is what you want.

For an ultimate and extended taste experience, you can infuse the leaves for a second or even a third time. During the first infusion the rolled tea leaves will gradually open up, allowing them to release their first flavours. During a second infusion the leaves are already open and therefore give off their remaining flavours. For a second infusion, it is necessary to first drain or decant the used tea leaves, before adding the same amount of water at the same temperature. Depending on your personal preference, you can opt for the same or a slightly shorter infusion time. In short, you can experiment with our green gold to your heart's content, until you find the method that is best for you!
