Creamy butternut pumpkin soup with crunchy SuperSprouts

Give the classic pumpkin soup a little something extra with a sprinkling of Biotona Superfoods. This soup is deliciously spicy, thanks to its Biotona Ginger and Biotona Curcuma, but the addition of crunchy Biotona SuperSprouts makes a great and easily digested topping that is simply bursting with health. Enrich your meals with all the vitality of plants in the making!

Ingredients
Onion, yellow, diced 1 small
Garlic, minced 1 clove
Olive oil 1 tablespoon
Butternut pumpkin, half, peeled and cut in cubes ½
Potatoes, peeled and cut in cubes 2 small / medium
Water
Sea salt ⅓ teaspoon or to taste
Biotona Ginger ½ teaspoon
Biotona Curcuma ½ teaspoon
For topping:
Biotona SuperSprouts 2 tablespoons
Yoghurt, plain (coconut, soy or regular) 2 teaspoons
Necessities
Immersion blender, cooking pan
  • Add olive oil, onion and garlic to a cooking pan. Cook for about 3 minutes or until onion becomes translucent.
  • Add pumpkin, potatoes, salt and enough water to cover the veggies. Bring to a boil, cover with a lid and let simmer for 20 minutes.
  • Remove from heat. Add Biotona Curcuma and Biotona Ginger powder and blend using an immersion (hand) blender until smooth. Taste and adjust salt if necessary.
  • Pour in cups (or bowls), top with crunchy Biotona SuperSprouts and (optionally) some plain yoghurt and enjoy!
