Cauliflower Pizza Crust
Comforting, healthy, gluten-free and delicious: this pizza has it all! The base is made entirely of cauliflower, Biotona Superfibres, almond meal, eggs and herbs. The addition of Biotona Superfibres also makes this pizza extra fibre-rich, so that you feel full for a long time after you have eaten. In other words, it is the ultimate guilty pleasure!

Cauliflower florets | 400 g |

Almond meal | 50 g |
Eggs | 2 |

Garlic powder | ⅓ teaspoon |
Toppings of choice: | Tomato sauce, zucchini slices, cherry tomatoes, arugula, Biotona Hemp seeds, black pepper, chili flakes |

Food processor, cooking pan, cheese cloth, mixing bowl, baking tray, oven |
- Add cauliflower florets to the food processor and blitz until you have rice consistency. It is also possible to use store-bought cauliflower rice.
- Add cauliflower rice to a large cooking pan with enough water to cover it. Bring to a boil and cook for 10 minutes. Drain and set aside to cool.
- When cauliflower rice cools enough not to burn your hands, transfer it to a cheese cloth and squeeze all the excess water from it. There will be a lot of water coming out so be patient. This step is important, otherwise your pizza will be too soft and you won’t be able to hold it in your hands.
- Transfer squeezed cauliflower to a bowl, add Biotona SuperFibres, almond meal, eggs, salt and garlic powder. Use a fork to mash and combine all the ingredients. At the end, use your hand to knead the dough, it should be possible to make a ball of dough.
- Preheat oven to 200°C. Line baking tray with baking paper. Transfer the dough on the paper and form it into pizza shape with your hands. It should be between 0,5 and 1 cm thick.
- Bake for 30 minutes, after that time remove from oven, flip (the easiest way is to do it between 2 sheets of baking paper), top with tomato sauce and thin zucchini slices. Return to oven for 10 minutes.
- Top with arugula, cherry tomatoes, Biotona Hemp seeds, black pepper and chili flakes (or different toppings of choice), slice and serve warm.
