Pumpkin seed pesto
This vegan superfood pesto is made with Biotona Pumpkin Seed. These are unique seeds extracted from Steiermark pumpkins. This Austrian variety of pumpkin has seeds without husks, as well as a deep dark green colour and an intense nutty flavour. They are so tasty that they can be eaten pure and unroasted.

Biotona Pumpkin seed | 1 cup |
Basil, fresh | 1 tightly packed cup |
Garlic | 1 clove |
Sea salt | ⅓ teaspoon |
Black pepper | To taste |
Olive oil | ¼ cup |
Almond milk, unsweetened | ½ cup |
Nutritional yeast | 2 tablespoon |

Blender or food processor, spatula |
- Add all ingredients to a food processor.
- Blend until paste consistency. Stop and scrape sides with a spatula whenever necessary.
- If the consistency if too thick, add water or more almond milk.
- Transfer to a jar and store in the fridge for up to 5 days.
