Maca blueberry banana bread

You can make this tasty, smooth and sweet banana bread with blueberries without butter, without flour and without sugar! The bananas give the bread a naturally sweet flavour. Ideal as a delicious alternative to your normal morning or evening sandwiches. Thanks to the addition of maca, this banana bread also gives you extra energy, both physically and mentally. Maca is what they call a natural adaptogen. This Peruvian root tuber contains phytonutrients that support our body’s adaptability. As a result, maca improves your general mood and increases your stress-resistance. It is not only suitable as part of a healthy breakfast or lunch, but can also serve as a scrumptious morning or afternoon snack!

Ingredients
Rolled oats 2 cups
Baking powder 2 teaspoons
Salt A pinch
Biotona Maca 2 tablespoons
Large, very ripe bananas 2
Coconut oil, melted ¼ cup
Almond milk, unsweetened ¼ cup
Vanilla extract 1 teaspoon
Blueberries ½ cup
Necessities
Food processor for grinding the oats
Bread tin
  • Place oats in a food processor and process until you have a consistency of rough flour.
  • In a large bowl, mix ground oats with baking powder, salt and maca powder.
  • Mash bananas with a fork.
  • Add mashed bananas, coconut oil, milk and vanilla to the dry mixture and mix until well combined.
  • Gently fold in blueberries.
  • Transfer the batter to a bread tin lined with parchment paper. Bake about 35 minutes in the oven at 180°C.
