Coconut oil is a stable oil that is heat-resistant, non-perishable and does not easily oxidise into trans fat. The specific fatty acids (medium chain fatty acids or MCFAs) in this oil are easily absorbed by the blood via the intestines, before being converted into energy. In contrast to long chain fatty acids, these medium chains provide immediate energy and accumulate much less quickly as body fat. This not only prevents you from putting on weight, but also helps you to avoid heart and vascular diseases!
