
Not all (green) superfoods are the same
We all know that fresh vegetables are packed full of vitamins, minerals and other phytonutrients. Green superfoods like barley grass, wheatgrass, chlorella and green tea are so rich in beneficial ingredients that you only need a small amount to give yourself a daily boost of health and vitality.
What should you look out for when you buy?
If we assume that you want something that is really healthy, tastes good and gives you a natural boost of energy, then you really need to look out for the following characteristics when you are next in your local superfood store:
Choose ‘raw’ or ‘living’ food.
This is food that has not been heated to a temperature higher than 42 °C and has undergone only a minimum of processing. A good processing procedure ensures that all the beneficial nutrients are retained. This will also help to preserve a vibrant taste that is close to natural taste of the fresh product.
Because fresh and raw food cannot be kept for as long as other foods and because their availability varies from season to season and region to region, different processes have been developed to dry and preserve superfoods, all of which do not exceed the maximum beneficial temperature of 42°C.
Freeze-drying is frequently used, which involves the drying of the frozen fresh material by the sublimation of the ice-crystals into condensation.
Saps and juices – for example, wheatgrass juice – can also be dried in a manner that guarantees a ‘raw’ end product. This often involves spray drying at controlled temperatures, with the fresh juice being atomised and dried rapidly, to produce a powder that still contains all the nutrients.
Some products are made using special drying techniques with infra-red rays, which again guarantees retention of the flavour, colour and phytonutrients of the original fresh material.
Last but not least, many superfoods are dried at low temperature (sometimes outdoors) in controlled conditions. This is a traditional and very natural process that has been used for centuries to preserve food and keep it fresh.
Look out for products that are 100% biologically grown.
