Matcha christmas tree cookies
The drinking of a bowl of bright green matcha tea or a fancy matcha latte is a healthy habit that has come to Europe from Japan. However, matcha can also be used in baking, to give all your cakes and pastries the same wonderful bright green colour, which is ideal for these Christmas tree biscuits!
Biotona Matcha is of the very highest quality, which means that it is made exclusively from fresh young tealeaves from the first harvesting (in May). These leaves are exceptionally rich in important nutrients. For three to five weeks before harvesting the tea shrubs are 90% covered with tarpaulins, so that they are in the shade. To make up for the resulting lack of sunlight, the leaves produce extra chlorophyll. This is the green pigment that gives the leaves their fantastic colour – and now does the same for these cute Christmas trees!

Oat flour | 80 g |
Tapioca flour | 2 eetlepels |
Biotona Matcha Premium or Beginner’s Matcha | 2-3 teaspoons |
Fine sea salt | Small pinch |
Agave syrup | 3 tablespoons |
Coconut oil, melted or softened | 60 ml |

- Add oat flour, tapioca flour, matcha powder and salt to a mixing bowl. Combine.
- Add agave syrup and coconut oil. Mix with a spoon, then use your hands to knead into a ball of dough. If too sticky, feel free to add an extra tablespoon of oat flour.
- Wrap the dough in a piece of kitchen foil and refrigerate for 20 minutes.
- Roll cooled dough until about 5mm thick. If it sticks to your rolling pin, you can roll it between two sheets of baking paper.
- Use a cookie cutter to cut out desired shapes. Gently transfer on a baking tray lined with baking paper.
- Preheat the oven to 175C. Bake the cookies for about 9 minutes, but after 8 minutes keep the eye on them so the edges don’t burn.
- Let cool on the baking tray for 10 minutes, then transfer on a cooling rack.
- You can leave the cookies as they are or decorate according to your preferences. For example sprinkle with some Biotona Coconut milk powder and/or Biotona Matcha powder.
